Peach Blueberry Crisp

Dessert

Combining two perfect fruits into one ultimate baking dish. This is undoubtedly the best crisp that doesn't rely on butter for its flavour.

Ingredients

6-7 whole Peaches
14 ounces Blueberries
1/2 cup (100g) White Sugar
2 Tbsp Lemon Juice
1 Tbsp Cornstarch
3/4 cup (90g) Flour
1/3 cup Oats
1/2 cup Coconut Flakes
1/4 cup (55g) Brown Sugar
1/2 tsp Salt
1 tsp Cinnamon
1/2 cup Butter

Instructions

  1. Preheat oven to 350 degrees
  2. Slice up the peaches. (Immerse in boiling water for 30 seconds to make pealing easier.) Add to large mixing bowl.
  3. Add blueberries.
  4. Toss fruit with sugar and let sit for 20 minutes. Afterwards drain the liquid from the fruit. (store that liquid for cocktails or whatever)
  5. Add lemon juice and cornstarch and fold together.
  6. Add fruit to baking dish.
  7. Combine flour, oats, coconut flakes, almonds, brown sugar, salt, cinnamon, to a mixing bowl
  8. Melt butter and pour over. Mix ingredients and work it
  9. Sprinkle crisp over the fruit in the baking pan
  10. Bake for 40-45 minutes. Let cool afterwards.
