Chris’s Okra Stew

Ingredients

| 1 cup | Water |
| 1 cup | Broth (vegetable or chicken) |
| 1 cup | Sliced mushrooms (optional) |
| 2 stalks | Celery |
| 1 | Bell pepper |
| Handful | Parsley or cilantro |
| 400g | Okra |
| Salt | Generous amount |
| 1 tsp | Smoked paprika |
| 2 tsp | Cumin |
| 1/2 tsp | Fennel seeds |
| 1 can | Diced tomatoes |
| 1/2 | Lime (juiced) |
| 2 tbsp | Maple syrup |
Instructions
- Heat oil in a big pot (medium heat) and sauté two sliced (half-moons) spicy sausages and 1/2 white onion. While that is cooking, dice 4 cloves of garlic and optionally grate 2 inches of fresh ginger.
- When the sausage is cooked, add the garlic and ginger until fragrant.
- Next, add 1 cup of water and 1 cup of broth. Scrape bottom of the pot if needed. Optionally add a handful of very small pieces of dried or fresh mushrooms for extra umami flavour.
- Slice 2 stalks of celery, 1 bell pepper, and a handful of fresh cilantro and parsley. Prepare the okra (400g) by rinsing it thoroughly, trimming both ends, and slicing it into bite-sized pieces. The okra may become slimy, which is normal and not something to avoid when making stew. Add the okra, celery, pepper, cilantro and parsley to the pot. Give it a good stir and let it cook in the liquid.
- Salt the pot GENEROUSLY. This is Chris’ special touch.
- Add around 1 teaspoon of smoked paprika, 2 teaspoons of cumin and a 1/2 teaspoon of fennel seeds.
- Add a can of diced tomatoes and broth as need to get to a chilli like consistency. Let cook on medium for 15-20 minutes until your veggies are as soft as you like them. The okra should lose its sliminess. The stew should not be boiling, just hot.
- Add juice of 1/2 a lime and 2tbs of maple syrup.
- Serve with rice or potatoes.
